Tiramisu

Ingredients 

6 Large Egg Yolks

1 cup Granulated Sugar 

1 1/4 cup Heavy Cream

1/2 cup powdered Sugar 

2tbs Vanilla Extract

2 cups Mascarpone (Room Temperature)

2 1/2 cups coffee (the stronger the better)

1/4 coffee liquor (1)

cocoa powder

1/4 cups coffee liquor (2)

Directions

Start by getting a medium pot half way filled with water and bring it to a boil. This is going to be our water bath.

 Next we can start by separating our egg yolks from our egg whites, go ahead and place the egg yolks into a bowl a medium size bowl.

 Add your sugar and your 1/4 cup of Coffee Liquor, whisk until combined.

 Now take your bowl and put it over the pot with boiling water. We want to constantly mix while the steam from the water thickens and cooks our eggs.

 If you stop whisking you will get scrambled eggs so this step it’s important. Once you achieve a thick Consistency remove from the heat and add your mascarpone cheese mix until combined and store in the refrigerator until we are ready to use again.

 While the mixture cools we are going to start our whip cream. Really easy and only three ingredients. 

Get a medium size bowl or a Kitchen aid. Add your cold heavy cream and start mixing on medium high speed. If using a whisk get that arm work out ready! Go ahead and add in your powdered sugar followed by vanilla extract. Mix until you have achieved a beautiful fluffy silky texture.

 Grab your mixture from the fridge and fold in your whipped cream cream, be carful not to over-mix as we want to keep the integrity of the whipped cream. This will keep our mixture nice and fluffy when eating. 

Once incorporated brew your favorite strong coffee and add 1/4 cup of coffee liquor. 

This is the fun part! It is time to assemble our tiramisu. Dip your lady fingers into your coffee quickly, if you leave them for too long they will become soggy, we really want to keep slight texture. 

Cover your tray with a layer of lady fingers followed by the cream on top making sure all the lady fingers are covered. Repeat this process until you reach the top of your dish With cream being the ending to your layer.

 We are almost there don’t worry! The last part is take your cocoa powder and dust the top covering all visual sighting of the cream. Store in the refrigerator and store until ready to serve ! Enjoy !
