1/2 white onion
2tbs unsalted butter
3tbs extra virgin olive oil
1 quart San Marzano Tomatoes
3/4 cup heavy cream
bundle of Basil
Salt to taste
Instructions
* start by dicing your onion. I go for a small dice but we will be emulsifying this recipe at the end so don’t go crazy trying to make. It perfect.
* Next get a medium sauce pan on medium high heat and go ahead add your extra virgin olive oil.
* Once your oil reaches temp about two minutes add your onion, cook down for about 3 minutes then add your butter.
* Once your butter has melted and onions are translucent add two shots of vodka (brand does not matter).
* Let the vodka catch fire so the alcohol burns off this only lasts a couple seconds so don’t be scared!
* Once the Vodka is cooked off go ahead and tear some fresh basil in, give it a mix.
* Add salt then follow it by adding your tomatoes, let simmer for 20 minutes.
* Go ahead and add your heavy cream, let simmer for about 30-40 minutes then season with salt to taste.
* Once the heavy cream has reduced and you have achieved a beautiful dark orange color, go ahead and emulsify until completely smooth.
* Let simmer for another 20 minutes, remove from the heat and let get to room temperature before putting your lid on !
